Late Summer Tomato Toast
There's nothing I love more than a recipe that isn't really a recipe at all. At the end of August I whipped up this mini meal/large snack, using one of the delicious tomatoes we grew in our garden (by accident, might I add!) Seriously, this year our garden was overtaken by tomato plants and we DIDN'T. EVEN. PLANT. TOMATOES. Now it's October (read: FALL) and we still have tomato plants going strong.
If you happen to find yourself in a similar predicament, here's how to recreate this delicious tomato toast, perfect for the end of summer when you just can't eat another salad.
Late Summer Tomato Toast
Toast a slice of your favorite bread. Schmear it with a generous glob of your favorite soft cheese. I used goat cheese, but fresh ricotta or Boursin would be just as delicious. Top with a few thick slices of your most beautiful, ripe summer tomato. Scatter a small handful of basil leaves and basil flowers (if you have them) over the top of the tomato slices. Finish with a drizzle of local honey and a sprinkle of flaky sea salt. Devour as necessary.
