Summer Crunch Salad
You can’t really call this a recipe. The measurements are more like guides, you can use any of your favorite types of summer produce, and substitutions will probably only make it better. If you make this with a simple formula in mind, you should be able to make this same salad in a variety of ways, all summer long. The formula is:
2 PARTS SALAD GREENS + 1 PART SUMMER FRUIT + ½ PART RAW VEGGIES + ¼ PART CHEESE + ¼ PART CRUNCH
Fill a bowl with your favorite salad greens. I used baby spinach and arugula. Add 1 quartered and sliced radish, 1 quartered and sliced baby turnip, 1 small diced nectarine, 1 ounce of diced fresh mozzarella, and 1/3 cup of dry-roasted and salted edamame. Season with 6 chopped fresh mint leaves, salt and pepper, and if you have it, a sprinkle of Everything but the Bagel seasoning from Trader Joe’s. For dressing, simply add the juice of half a lemon, and a bit of olive oil. Toss to combine and enjoy! To bump up the protein even more, you can add grilled chicken or shrimp.
