Tzatziki – Yogurt Dip with Cucumber + Garlic
If you’ve ever eaten a Gyro and wondered how they make that delicious sauce, here’s your answer! Tzatziki, a yogurt-based dip / sauce / spread is a Greek staple, made from just a few fresh and simple ingredients, and packed with protein and vibrant flavor. It makes a delicious dip for pita bread, fresh veggies, lamb meatballs, and even fried veggies like zucchini. You can also use it as a sandwich spread in place of mayo, or thin it out to make a sauce for grilled pork or chicken. If you want to experiment with different variations, feel free to throw in a bit of fresh mint or dill. The possibilities are endless!
Tzatziki
Makes about 3 cups
2 cups plain Greek yogurt (I prefer FAGE Total)
2 TB extra virgin olive oil
1 cup coarsely-grated, unpeeled cucumber
½ lemon, juiced
2 large cloves garlic, finely-grated
Kosher salt, to taste
In a medium bowl, combine yogurt, olive oil, cucumber, lemon juice, and garlic. Season with salt to taste. Cover and chill until ready to serve.
